Fukuoka prefecture being right next to the Genkainada (Genkai Sea) and Hibikinada (Hibikinada Sea), has access to one of the best fishing sources in Japan. With such an advantage, what do Fukuoka locals recommend for Sushi and Seafood eateries?
To share restaurants and eateries that only the locals know, here are some favorites from a local TV program Takunaru (TVQ たくなる)from their 11.2.24 show.
Heishirou 平四郎 Standing Sushi Shop

This shop features fresh catches from the Kitakyushu area at low prices. It is a standing sushi bar, so it's not meant for customers to spend a leisurely time. Their best-selling dish is the Gokanmori (5種盛), which costs an incredible JPY1000 and includes squid, tuna, and even a puffer fish.
Kyo Sushi

Kyosushi is a Kaitensushi type of restaurant in Kitakyushu. They source their fish directly from Kitakyusyu's central wholesale market. With 4 different restaurants under their belt, they are a popular sushi destination for the locals.
Aka Sushi

The same group that runs Kyosushi above, has launched a new type of sushi restaurant named Aka Sushi (or red sushi). With a focus on Kitakyushu sourced fishes, Aka Sushi focuses on Edomae style sushi where they incorporate aging and marinating of fishes and serve them with red vinegar flavored rice or shari, it's namesake.
Through the aging process, they bring out more enhancing flavoring that brings sushi to a new culinary level. For intance, their Amadai (Sweet Snapper or 甘鯛) is aged for an incredible to extract peak flavoring! Or you could even try their blue-fin tuna that's aged for an even longer 1 week!
With some much more preparation and extra aging processes added, you won't be blamed for assuming pricing will be much higher. But that's where the Kyosushi business philosophy of keeping pricing reaching for everyone kicks in. The Tokujo 12 pc set below is set an a reasonable JPY6050.
